The Distillation Process we use to create our whisky is a highly specialised, detailed and possibly boring one! So here's a more entertaining and possibly less accurate version...
Whisky requires three essential ingredients; barley, water and yeast. The barley and water are both sourced locally and of the highest possible quality. The yeast however, comes from the mainland, but we prepare it on site in a unique and completely secretive way.
To start with, the barley is heated, crushed and added to hot water. It's then mashed, rested, drained, heated again, mixed with yeast and then fermented, when the sugars turn to alcohol. We then distil the liquid by superheating it, causing vapours to form condensation. We distil this liquid again, then we extract the bit that's of good enough quality to be stored in casks. And that's exactly what we do.
The casks are American Oak barrels that previously held bourbon whisky.
Unfortunately we didn't get to empty them, but we put our liquid into them, allowing it to mature for at least two years. Only then do we have ourselves a spirit that can officially be called 'whisky'.
